Recipe Du Jour - Potato Salad


Today I was watching Bobby Flay grill potatoes and it gave me the idea to make a grilled potato salad.

Ingredients:

Small red/white potatoes (about 14-20)
1/2 a bunch of parsley (finely chopped)
2 medium-sized scallions ( green and white parts chopped)
dill (optional or instead of scallions)
dijon mustard
Mayonaisse (preferably made with olive oil)
1/2 a large lemon
2 tbsp red wine vinegar
salt
pepper

Needed: grill or grill pan

Instructions
Boil potatoes until just fork tender, drain, and let cool.
Cut potatoes in quarters or slices
lightly brush quartered potatoes with olive oil before placing on the grill
Turn potatoes once grill marks are on one side and repeat
Salt potatoes immediately after taking off the grill

While the potatoes are grilling combine:
mayonaisse, dijon mustard, red wine vinegar, lemon juice, salt and pepper. Whisk together until combined.

Pour vinagrette over potatoes and toss in scallions and parsley, salt and pepper to taste.
Can be eaten warm or at room temperature.
